Sunnyside Prosciutto Avocado Toast

I love waking up early and trying out new recipes. It reminds me of when I was an insomniac and first became a chef. I have the kitchen all to myself, I get in my zone, and I make new combinations of what’s in the fridge. Yup, that’s how I came up with one of my best sandwich recipes ever: Sunnyside Prosciutto Avocado Toast!

Contrary to popular belief, the combination of avocados with toast or bread is not a new American cuisine idea. It doesn’t originate from a hip city like LA or San Francisco, California. Avocado Toast as we call it today, dates back at least 100 years in Australia, to the 1800s in Britain, and back to the Aztecs in Mexico. Likewise, Prosciutto Toast has been consumed by Italians without a recipe ever since the invention of prosciutto.

So, on one of my recent early cooking mornings, I put them both together, and realized I was onto something special with Prosciutto Avocado Toast. I knew the combination of salty prosciutto and eggs would complement the buttery avocado. The egg needed to be runny so the toast could soak it up. And, I had some Boursin in the fridge and that is good with everything. This open faced sandwich takes just minutes to make, but believe me, you’ll get credit for creating a masterpiece! It looks stunning and tastes incredible!

Sunnyside Prosciutto Avocado Toast

Servings: 2

Ingredients
2 slices whole grain bread
2 large eggs
3 tablespoons Boursin Cheese
2 slices prosciutto
1/2 avocado sliced thin
1 tablespoon red onion, chopped
1 pinch salt
1 pinch pepper
1 teaspoon parsley or cilantro for garnish (optional)

Instructions
1. Toast bread until golden brown.
2. Cook eggs sunnyside up in frying pan. Try to keep then separated.
3. When toast is ready, spread Boursin cheese on one side of each slice.

4. Place one slice of prosciutto on top of the Boursin toast.
5. Top the prosciutto with the onion.
6. Remove the frying pan from the stove, and slide one egg on top of each of the Prosciutto Avocado Toasts.
7. Add salt and pepper to taste.
8. Garnish with parsley or cilantro

Tips
1. If you do not have Boursin, you can buy it here.
2. If you need to speed up the cooking of the egg, you can cover it. The top layer of the yolk will cook so it will not have that sunnyside up look, but it will still taste delicious!
