Whether a recipe uses wafers, chocolate bars, or mini chocolate chips, these are interchangeable. Just make sure to always use a high-quality chocolate.

In addition, the type of chocolate is also up to you. If you only like milk chocolate, then substitute that for dark in any recipe.

Coating Truffles

I find dipping the candy balls into the melted chocolate on a fork the best way. Then use a toothpick or cocktail stick to roll the ball on to the parchment paper.
